This is a favorite dish of my mom's and mine and you can modify to a non vegetarian version if you want but to me it's so good you really don't miss it!
Ingredients:
1 package of Morning Star Farms of Chicken Patties, can use plain ones or Italian Herb ones, (there are 4 in a pack or you can use normal chicken patties (but only use 4 of them)
1 package of any flavored shredded cheese-I normally use Mexican Blend cheese
1 jar of spaghetti sauce-any flavor works fine
2 teaspoons of Italian seasoning
1/2 box of noodles-can use spaghetti or linguni or angel hair
1 small onion
1 small jar of mushrooms
1 small clove of garlic or 1 tablespoon of minced garlic
1 jar of banana peppers
1 medium green/red/orange/yellow pepper
Directions: Prepare the half of box of noodles as directed on the package, if you don't have the package here is how to fix it, in a large saucepan boil 4 quarts (this is 8 cups) of water and when the water is boiling, add noodles and let it boil for an additional 10 minutes. While the noodles are cooking, microwave your chicken or vegetarian chicken patties in your microwave for about 3 minutes, if they are still cool to the touch after they finish that is fine because they will cook more in the oven. Meanwhile open up your jar of spaghetti sauce, chop up your onion and your pepper and place into a medium saucepan, if you do not have minced garlic then chop up your garlic clove now, if you have minced garlic please add it to your sauce mixture. Next add the two tablespoons of Italian seasoning to your sauce mixture and your jar of mushrooms and a small handful of banana peppers.
Once the sauce mixture has come to a boil which will be about 10 minutes or less depending on how hot your stove cooks, get a large baking pan and pour half of the sauce into the bottom of it, next place your chicken patties on top of that, after you do that add the rest of your sauce mixture to the top, now sprinkle the cheese from the package onto this sauce/chicken mixture, now place it into an oven at 350 degrees for about 10 minutes or until the cheese melts.
Once the cheese has melted let the pan cool off for about a minute or two and then serve up your noodles onto a plate and add your sauce/chicken/cheese mixture on top and serve! You can also serve with breadsticks or garlic bread.
