No, it's not this guy, although he's a fave of mine (and that's not even mentioning how amazing Karla DaVito is in this clip) , and I do remember that they ate his character in Rocky Horror:
I'm making this tonight, so it's a good opportunity to share it here. This recipe is deceptively simple, but when you try it you'll be surprised at how good it is.
I've been making this recipe for decades now, and although I use others from time to time, 8 times out of 10 this is the one I make.
It's from a book called Slimming Down by Ed McMahon, who was Johnny Carson's sidekick on The Tonight Show for eons. It was his favorite meatloaf too. And no, I don't think it will help you to slim down one iota.
Oh, by the way, don't substitute bread crumbs for the crackers (make sure you're using salted crackers), and be sure to use Chili Sauce (Heinz makes a good one) instead of ketchup. You'll find it next to ketchups in the supermarket.
ingredients:
1.5 lbs ground beef
1/2 cup medium cracker crumbs
2 beaten eggs
1 cup tomato sauce
1/2 cup chopped green onion (I use the whole thing, tops and bottoms both)
3 tablespoons chopped green pepper
1 teaspoon salt
a good pinch or more of marjoram and thyme
chili sauce
directions:
Put all ingredients together except chili sauce. Mix Well.
Form a loaf shape and place in a baking dish. (I actually do this a little differently. I like to use an aluminum loaf pan, as I think it makes the outside a bit crispier.)
Score loaf by pressing top with wooden spoonhandle, fill spaces with chili sauce. Bake one hour and 15 minutes at 350 degrees. I like to drain mine several times while it's cooking.
If you can hold yourself off and let it sit for about 10 minutes after removing from the oven, it will hold together better.
Enjoy!
I have a recipe for the best mashed potatoes you've ever tasted, that's a great compliment for this dish which I'll share with you later. It's guaranteed to makes your dinner guests stagger with ecstacy.
