As I thought about this episode today, I realize quite a lot was revealed about Simon's personality. It started out with him explaining to Kaylee that he does use swear words, but she commented that she has never heard him. Later, Simon was less than eloquent when he talked about buying the mud. It occurred to me today that he was stammering because he is unused to lying. He was very uncomfortable making up lies. When he was tipsy, he was more open about his feelings, but he still did not try to compromise Kaylee. He looked so guilty when Mal saw him sleeping next to Kaylee because that is something he would not ordinarily do.
Lastly, his explanation to Kaylee that he maintains his manners because that is his way of showing her that he respects her revealed he has emotions same as others, but he strives to control them.
A true gentleman. *sigh*
